Guided by the Moon: An Evening at Aperitif Bali
Menu: Guided by the Moon — “A Curated Journey to Purnama Kapat“
Tucked into the quiet hills of Ubud, Aperitif Bali offers more than just a fine dining experience — it feels like stepping into a carefully orchestrated story.
On the evening I visited, the menu was inspired by the Moon Cycle, titled “Guided by the Moon: A Curated Journey to Purnama Kapat.” It wasn’t just a theme, but a narrative that unfolded course by course, reflecting rhythm, transition, and quiet transformation.
An Invitation Behind Closed Doors
Pinstripe Bar — Aperitifs
The night began not at the dining table, but at the restaurant’s hidden speakeasy-style bar, Pinstripe Bar.
Dimly lit and intimate, the space felt worlds away from the lush openness of Ubud. Here, we were welcomed with a carefully crafted drink — a prelude to the evening ahead. It set the tone immediately: thoughtful, layered, and just a little theatrical.
From there, we were guided into the main dining room — a transition that felt intentional, almost like moving from one chapter to the next.
A Menu in Phases
Helmed by Belgian chef Nic Vanderbeeken, the cuisine at Aperitif blends modern European techniques with locally sourced Indonesian ingredients. The result is a menu that feels both refined and deeply connected to its surroundings.
The five-course journey unfolded with a quiet confidence. Each dish felt precise, but never overly complicated — allowing the ingredients to speak while still delivering moments of surprise.
There was a clear sense of progression throughout the meal. Flavors built upon each other, shifting from light and delicate to deeper, more complex expressions — much like the phases of the moon itself.

Where Europe Meets Bali
What makes Aperitif particularly compelling is its balance. European culinary structure provides the foundation, but local ingredients bring warmth and identity.
You taste Bali in subtle ways — in the aromatics, the textures, the depth of flavor — but always through a refined, contemporary lens. It’s not fusion for the sake of novelty; it’s integration done with intention.
Full Moon — Asparagus
Atmosphere and Experience
Eel in the Green, Pearl Barley
The dining room itself reflects the same philosophy. Elegant without being stiff, intimate without feeling confined. Soft lighting, attentive service, and a sense of calm allow the focus to remain exactly where it should be — on the experience.
Service flows seamlessly, guiding you through each course without interruption. There’s a quiet rhythm to the evening, echoing the lunar inspiration behind the menu.
Dessert — Tempeh
A Thoughtful Kind of Indulgence
Dining at Aperitif Bali isn’t about excess — it’s about intention. Every element, from the welcome drink to the final course, feels considered.
The “Journey to Purnama Kapat” doesn’t overwhelm; it invites you to slow down, to notice, and to experience each moment fully.
And by the end of the evening, you realize it’s not just the flavors you remember — but the feeling of being guided through something quietly beautiful.
